1 medium onion
2 jalapenos
1 Italian Roaster or other hot pepper
1 small poblano or other mild pepper
4 cloves garlic
1 lime, juiced
Pinch of salt and pepper
2 Tablespoons or 1/3 cup fresh cilantro chopped
Directions:
Shell and rinse the tomatillos.
Cut them in half.

Cut the peppers in half lengthwise and partially deseed.
Peel the garlic cloves.
Place all, cut side down on a large baking pan.
Broil (550 degrees) for 5-7 minutes, until they just begin to char.

Remove from under broiler and put all in a food processor, with the liquid they made, the lime juice, salt and pepper and cilantro.
Blend until desired chunkiness.
Transfer to a bowl and chill until ready to eat.
You can freeze the excess to enjoy later.
